Yes, I am posting this...

Who would have thought I would ever post about healthy snacks? What has my husband done to me! My idea of snacks used to be chips (or as we call them in Northern Ireland Crisps - or Crippies, for those of us who like to talk funny), gummy bears, or some shortbread to dunk in my coffee.

Obviously my health conscious husband is having an effect on me!

Even though it may take a little longer than going to the cupboard and pulling something out - its worth it! - I’m proud to say, I love these healthy snacks, especially the chickpeas.

The only thing I did differently was cooked them at 375oF or 400oF - depending how impatient I was feeling and for about 45 - 50 minutes, I like them REALLY crunchy!  For seasoning I add taco seasoning, or Iv done, garlic salt, pepper and a hint of chili powder to give it a little kick. I haven't tried making them sweet yet. I like them the other ways to much.

The crispy Kale is super simple:

  • Wash, dry and pull apart
  • Place on a baking sheet and toss in olive oil
  • Add some seasoning - salt, pepper, garlic, a little spice…
  • Cook 400oF - 40minutes - toss every 15minutes - keep an eye to it, mine was cooked a lot quicker than this, depends what height you put your oven rack at.
